The Night Shift

The Night Shift is an artisinal, small batch Mezcal with two bottlings, espadin and madre cuishe.

Both are uncommon, unique mezcals, from Oaxaca. Get one while you can.

Agave Espadín

Espadin is an agave native to Oaxaca. Our Maestro Mezcalero “Israel Perez Santiago”, lets the agave grow for 9-10 years until it flowers its quiote. Once it flowers, he cuts the quiote and lets the agave grow in the fields for an extra year. This allows for the sugars that would otherwise go to the flower to concentrate in the piña (root) of the agave. After the distillation process, the mezcal goes through a process of stabilization as it sits and rests for an extra year in glass containers. This gives it its smooth finish. The Night Shift espadin, comes with 46% alcohol and only 125-133 bottles are made per production. Each production carries unique flavor and none will be the same. Our espadin batches are one-time productions only. When a batch is sold out, it will never be reproduced again

Agave Madre Cuishe

Madre Cuishe is also native to Oaxaca. In our bottles we only used wild agaves that grew on their own for 11 years. To get the mezcal for bottling, the agave goes through similar processes as the espadin production. The difference, apart from their wild nature, is that we let the mezcal stabilize in glass containers for FOUR years before bottling. The Night Shift madre cuishe, comes with 44% alcohol and we only carry 129 bottles. No more will be made of this beautiful spirit ever again.
